Rustic Brie and Pumpkin Toast: My Favorite Fall Breakfast

Ah, fall. It's my favorite time of year. I love when the air feels crisp, the leaves start to change colors, and things feel a bit cozier. There is little I love more than a autumnal activity like a football game, baking with pumpkin anything, apple picking, or a large, oversized sweater. The smile I can feel creeping up on my face with these simple, seasonal pleasures help me not to how basic it may seem.

I've been trying to get a bit better about mindful eating. Not eating mindfully in the way of counting calories or dieting, but rather eating things that make me happy. Sitting in one place and indulging in the simple act of eating a meal rather than stuffing something in my mouth on the way out the door or just not eating at all. It's a reminder for me to sit and be still and enjoy where I am at.

2 Slices of Rustic Bread from Trader Joe's

2 Mini Brie Cheese from Trader Joe's

Pumpkin Butter from Trader Joe's


  1. Toast your slices of Trader Joe's Rustic Bread to your desired toasty-ness. I usually do two.

  2. Put two of the mini brie cheeses in a microwave safe bowl. Warm for 30 seconds. Stir until the texture is creamy and smooth.

  3. Once done toasting, spread brie on toast.

  4. Add a small dollop of Pumpkin Butter on top. Pumpkin Butter is sweeeet, so I prefer a tiny amount.

  5. Enjoy!
